Potato Burgers?

This morning was a fast walk with my stepmom and Kyra. Tonight is the Fitnessista’s Ab Burners…
Lunch was a quick bowl of Amy’s Fire Roasted Southwest Vegetable Soup with a Field Roast Sausage thrown in. I knew I needed some protein or I’d be hungry 10 minutes later. It was surprisingly filling and, sadly, consumed without a picture. What can I say? I was going to be late for work.
Tonight’s dinner was a new recipe. I’ve seen a bunch of recipes lately for veggie burgers made from potato and bean. I had some sweet potatoes that needed a job so I made Ashley’s recipe for potato burgers.
They are made with sweet potatoes, black beans, corn, quinoa, oat flour, onions, garlic, and some seasonings.
They bake for 30 minutes and I really hoped they’d be a little firmer or have a little more texture. Makes me wonder if I did something wrong…
But if you stick something round on a bun with cheese, lettuce, and tomato it pretty much always tastes like a “burger” to me. We had these with broccoli, rather than french fries, because the potatoes were IN the burger!
Broccoli is so much prettier before you cook it!
The verdict: they were kind of bland and kind of mushy and pretty labor intensive. We will eat the leftovers, but I won’t be making potato burgers again for a while!
